I will admit, these cookies were pretty darn tasty and had a slightly nutty flavor (no nuts added this time). I love hummus, and I love chocolate chip cookies but…together? Weird, but let’s give it a go! I have found that the desserts from her book are usually well received if I tell the person AFTER they have eaten (or for those on the diet fence tell them first!) Most the recipes in her book aren’t that far out there, but I never in a million years would have thought to use chickpeas as part of the base to chocolate chip cookies. ![]() I have always been intrigued by this recipe since I first bought her book, but never had any willing subjects. Armed with a can of chickpeas and Jessica Seinfeld’s ‘ Deceptively Delicious‘ cookbook ( buy*), I decided to take on the Chocolate Chip cookies. I have already brought or made coffee cake a few times, and was looking for something different. No rhyme or reason, just my own preference when it comes to oils and meats. It’s time again for Frazzled Moms Coffee (monthly MOMS club event where all the kiddies play, and we try to drink coffee/tea etc). I also chose ground beef over ground turkey. I did not use cooking spray or oil, substituted with 1 tbsp coconut oil. PS: I made a few minor changes to my recipe. Simmer, covered, until the meatballs are no longer pink in the center, 12 to 15 minutes. Followed by a “yuck”, and then by an ever so graceful spit out. And I’m being totally serious lovelies, all we get on the first try is a simple lick. However don’t get me wrong, she doesn’t accept new meals like these willingly, I make a batch that I can bring out each and every dinner time, added to her regular request, and one of the days she will get up the courage to attempt a lick. Between Jessica Seinfelds Deceptively Delicious, and the Weelicious Cookbook, I have been able to sneak so much food into this wee ones mouth, I will be forever grateful of their tips and tricks. Jeeze, how creative can I get with Chicken Strips and Fries. Ketchup almost always taking home the win, day in, day out. Dipping sauce of course must come with this fancy dish. Chicken, rolled in breading, served with a side of potato rolled in flour to coat. It’s funny how a picky eater will almost always approve of this chicken dish. I know I am not the only one with a child who asks for chicken strips and fries at 4pm each and everyday.
